A considerable number of guests are eagerly waiting to be won over by hotels willing to welcome them, offering creative breakfast options. We are not talking about just a trend, but a fact that was first observed in Europe, then in the United States and Canada, which represents about 25% of the population of these countries and which is now rapidly reaching Brazil. Some medical experts classify it as a wheat allergy specifically. Others prefer to classify it as the development of “gluten sensitivity or intolerance” as the number of celiac patients has not increased proportionately, while the group classified as “intolerant” or “sensitive” has grown exponentially.
